Mayonnaise with olive oil from home…
This is a special mayonnaise, as you hear from everyone that you have to use oils with the least possible flavor to make mayonnaise. This mayonnaise has the amazing taste of olive oil and you can use it comfortably in your salads, with your fish, with your chicken, in your toasts or sandwiches. In the beginning it will have a very strong taste of olive oil which will be mitigated if it is put in the fridge and cooled.
1 cup extra virgin olive oil
half a teaspoon of salt
juice of half a lemon
3 tablespoons mustard
freshly ground pepper
All our materials should be at room temperature. In a mixer, blender, multi or whatever you use, add the whole eggs, mustard and lemon juice, beat well to fluff the mixture. We start adding the olive oil little by little and we continue to beat the mixture, when we pour all the oil we continue to beat until we have a thick mixture, do not expect it to be as tight as the mayonnaise you buy in the supermarket, when it enters the fridge it will tighten more.
Store it in the refrigerator and consume within 3-4 days, do not forget it is homemade mayonnaise without preservatives.
